This recipe calls for a 6 pound prime rib to serve 8 people and requires an hour of marinating time before putting it in the oven.
2 tsp ground cumin
2 Tbsp ground coriander
2 Tbsp ground black pepper
2 Tbsp kosher salt
3 Tbsp Cajun-style blackened seasoning
1/4 cup chili powder
1/4 cup soy sauce
1/2 cup brown sugar
3/4 cup chili powder
2 cups water
6 pound prime rib roast with bone
1. In medium bowl, combine 1/4 cup chili powder, kosher salt, brown sugar, coriander, black pepper, cumin and soy sauce. In separate bowl mix the blackened seasoning and 1/2 cup chili powder.
2. Remove rack of ribs from roast and place them in the roasting pan. Rub the soy mixture all over the roast and then coat by rubbing the dry chili powder and blackened seasoning mixture all over it. Place roast on top of ribs in pan and let it marinate for at least an hour or cover and refrigerate overnight.
3. Remove cover and place pan on center rack of oven preheated to 500 degrees F. After roasting at 500 degrees for 15 minutes, reduce heat to 300 degrees F and pour water into pan. Continue to cook for about an hour (see cooking chart) and start checking internal temperature. The cooking chart will help you determine when your roast is rare, medium rare, medium etc.
4. Remove your roast 10 degrees F before it reaches your desired temperature and cover with foil tent and let rest 20 to 30 minutes. The temperature will continue to rise about ten degrees during this time.
